Salmon Patties

- 2 cans pink salmon
- 1-1/2 sleeves of saltines
- 1 white onion
- 2 eggs
Crush saltines to a coarse grind. Chop onion to small pieces 1/2 cup.
Empty 2 cans of salmon into mixing bowl with juices. Remove soft bones from salmon chunks. Blend all ingredients until fully mixed. Shape into small patties. Cover bottom of large fry skillet with 1/2 cup cooking oil. Place patties in hot oiled skillet and brown each side for 3 mins. Serve with sweet and sour salad dressing.
